Since the New Spanish is a thing of the trend, many chefs who create
it will spit in disgust if you call them that (because it is uncool to
be labeled), but for the sake of simplicity this is what we will call
it. Just keep it to yourself.
It is not to say that other restaurants are not creative. It is just
that others usually have a certain reference point, while these go totally
into unknown recipes - whether as a success or a total disaster!
